I scream, you scream, we all scream for ice cream! Now you can have ice cream for breakfast any day of the week! This Strawberries & Cream Breakfast Ice Cream is the perfect start to your summer day.
We’ve had a warm week so far in Northeast PA & it finally feels like summer! I’m usually a cereal, oatmeal, or pancake/muffin person in the morning, but sometimes when it hits 80 before lunchtime, you need something cool & creamy. I’m not a huge fan of smoothies first thing in the morning because I like to chew my breakfast. Smoothie bowls are a little more fulfilling, but sometimes still not enough for a meal for me personally. To me, the thicker the better because I feel it sticks with me longer.
When the smoothie bowl craze started, it got me thinking about what I could create. I remembered years ago when I made this sort of ice cream-like, yet sort of smoothie-ish thing for breakfast one summer. I knew this would be a perfect recipe for me to post because 1. I love ice cream 2. I love breakfast 3. It’s absolutely perfect for summer.
The recipe takes very little time to prepare, minus the ice cubes you need to freeze overnight. You could make a bunch of the fruity ice cubes ahead of time & store them in Ziploc baggies for easy future use. I also really like this recipe because it’s super customizable. The amounts basically serve as your basis & you could make tons of different flavors. I personally love the strawberries & cream flavor; I think it really tastes awesome. But you could change the flavors of the juice & kefir, the protein powder, and the type of fruit & come up with a completely new flavor of “ice cream.” Also, if you can’t find a kefir flavor you like you could sub it out for drinkable yogurt. I really like how the full fat kefir adds to the creamy consistency. I feel this really helps it form like true ice cream. You could substitute a low fat kefir in if you prefer.
The texture of this is really, really ice cream-like, which I think is amazing! I really love ice cream & could eat it at any time of day. Knowing that I get some fruit, dairy, protein, and no added sugar with this version is great! Now that the kids are home for the summer, this could be a really fun “treat” to make together for breakfast. Plus, it doesn’t just have to be a breakfast item. This is a great snack or dessert option, too. If you are serving it to little kids, the portion is kind of big, so I would suggest splitting it between 2 children. Sometimes it’s a lot for me to finish, so you may want to save half in the freezer for later in the day.
I think this breakfast ice cream is a perfect way to welcome summer! I’m picturing starting the day with this creamy treat on the deck & soaking in the sun. Now, go make some!
