Life Update: I'm a Southerner!

I've had some big life changes in the past couple months that I wanted to fill you in on! Find out what I've been up to behind the scenes.

​I wanted to check in & share some of the changes that have been going on behind the scenes here at EmPowered Nutrition. For those of you on social media, you probably have already figured it out, but I’ve moved!
 
About a little over a month ago I moved down to Charlotte, NC because I accepted a job at UNC Charlotte as the dietitian of their dining services. So far my job has been great, super busy, but really good! As the school year gets going, I’ll focus on nutrition education & interaction with the students on campus, as well as go over menus, create special food events, work individually with students that have dietary concerns & more! Last week was the first week the students were back on campus, which meant it was a crazy week. I’m excited to see what the future has in store & how I can learn and grow as a dietitian. 
My apartment is finally coming along & we’re getting settled in. I love the decorating part, but the packing & unpacking was a lot of work. So I’m glad that part is over! Colin & I have done a little bit of exploring around Charlotte so far & it has been amazing! The weather has been nothing but gorgeous & there always seems to be things to do to keep us busy on the weekends. Charlotte is such a young city & there’s people that have moved here from so many different places, so I’m excited to meet new people & continue exploring. It also seems like a very active city - there are tons of greenways, active events, and run clubs. I’m still finding my new routine, which has been a little challenging for me, but I’m making progress.
 
Change is often a hard pill for me to swallow, so while I’ve totally embraced this move & am excited for what it means for me, it’s been a tough couple months. I’m trying to get back into a better self-care routine & just figure out a schedule for myself outside of work. It was a tough adjustment going from complete scheduling freedom (since I did my last year of grad school online) to way more structure in my day. I like structure & routine, but going from what seems like one end of the spectrum to the other has been a challenge.
 
One of the things I’m most excited about is embracing all the southern foods. It’s freaking awesome! And the fact that I can say y’all now & get away with it! I’m always taking recommendations of things to do or places to eat in the Charlotte area, so if you have any let me know :)

​So what does this mean for the blog…
 
I’m going to continue blogging every week, sharing recipes & nutrition tidbits with you for as long as I can & as long as I feel inspired to. I love writing & sharing my thoughts through this platform, and I also love getting in the kitchen & experimenting with food. Since I’ve been settling into my new routine, I honestly haven’t really felt like cooking all that much. But I’m getting more inspired & having new thoughts on content I can share with you guys, so I’m excited! It’s still a work in progress, but I want to blog because I want to & I never want it to feel forced, so stay tuned for new things coming soon!
